With Fall comes children jumping in piles of raked leaves, breaking out that old flannel shirt, football and carving pumpkins. Nothing sums up an American Fall more than that last sentence. Since I was a child, carving pumpkins and backyard football games were a normal weekend in October. Today not much has changed, but I see pumpkins very differently! As a child you just grabbed a pumpkin at the nearest pumpkin patch or grocery store. Took it home, mutilate it with a dull knife and stuck a candle inside until it started rotting on the front porch LOL! Today I still mutilate my pumpkin with terrible artwork, but I use the pumpkin for so much more! Roasted pumpkin seeds are a delicacy, pumpkin pie is an American classic, and the orange pumpkin guts can be added to smoothies or toast for spread during breakfast. There are many great recipes out there to add a little change to the families pumpkin carving fun this year. Here is a quick and easy recipe for my Cajun Roasted Pumpkin Seeds. CAJUN ROASTED PUMPKIN SEEDS

INGREDIENTS & MATERIALS
– 1 LARGE SHARP KNIFE
– 1 SPOON
– 1 BOWL FOR PUMPKIN GUTS
– 1 9″X 13″ GLASS BAKING DISH
– ALUMINIUM FOIL
– 1/3 CUP TONY CHACHERE’S CREOLE SEASONING
– 2 TEASPOONS GARLIC SALT
– 2 TEASPOONS MINCED ONIONS
– LOUISIANA GEM WORCESTERSHIRE SAUCE (FOR SOAKING)
– CRYSTAL LOUISIANA HOT SAUCE TO TASTE
– 1 TABLESPOON MELTED BUTTER
Cut open the pumpkin and scoop out all the seeds and orange guts. Place the seeds in glass baking bowl. Place the guts in separate bowl for smoothie, toast spread, etc.
Rinse and drain the seeds. I’ve found that by using a paper towel to pat dry the seeds, you can also separate the seeds from the pumpkin guts more easily.
Soak seeds in small amount of water, Tony Chacheres, Garlic Salt, Minced Onions, Worcestershire sauce and Crystal hot sauce and let sit for an hour. Drain if necessary.
Pre-heat oven to 300 degrees. Place the seeds evenly spread on baking sheet, Pour 1 table spoon of melted butter over seeds, sprinkle Tony Chacheres, Garlic Salt and Crystal hot sauce over seeds.
Bake in oven for 40-45 minutes or until golden brown, tossing seeds every 10 minutes. Depending on the oven I would start to taste test the seeds at 35 minutes.
Serve for a snack during parties or football games for the whole family to enjoy!
